Red tuna: 600g / Passion fruit: 4 / Pumpkin storks or bitter cabbage: 150g / Honey: 2 teaspoon / Lemongrass: 4 sticks / Lemongrass leaves: 6 / Garlic: 1 / Red chilli cut in small cubes: 1 / Salt, pepper, fish sauce / Shallot: 4 / Garlic: 4 cloves / Star anise for decoration
Cut the red tuna into pieces of about 130g.
Marinate the fish in the juice of 2 passion fruit, 1 teaspoon of honey, 1½ teaspoons of fish sauce and 1/3 teaspoon of pepper for 5 minutes.Skewer the fish on lemon grass sticks. Then wrap the lemongrass leaves around the fish.
Grill the tuna and lemongrass.
Carefully peel the pumpkin storks. Use only the younger parts. Wash.
Sauté the storks with the crushed garlic in the oil for a few minutes, season with the fish sauce and pepper.
For the sauce :
Cut the passion fruit in half, remove the juice. Saute the chopped shallots, add the passion juice. Season with honey, fish sauce, pepper and sliced chilli. Serve hot with rice in clay pot with spices.
